If I have to delete a user, will their data still stay?

Yes. If you delete a user from your MMC account, all records added and owned by this user will remain accessible within the Team Owner account. 

Tip: If you are not using a CRM integration or another system of record that talks to MMC - it is recommended to transfer record ownership to another user before user deletion if possible for easiest data transfer
